Chart of accounts, customers, vendors, items, open AR/AP, and opening balances are all included in setup. One to three years of historical detail is available as an add-on.

No. Business Central is fully managed by Microsoft (the platform) and Footing (the configuration and support). Your finance and operations users do not touch infrastructure. If you have an IT team, they will appreciate that there is nothing to maintain; if you do not, you will not miss it.
BC handles professional services, manufacturing, distribution, construction, retail, nonprofits, and field service out of the box. For industry-specific needs (job costing, project accounting, EDI, lot/serial tracking, multi-entity consolidation) we configure the relevant modules during setup or recommend a vetted AppSource add-in.
Yes, at any time after the initial 12-month commitment. Monthly subscriptions end at the close of the current billing cycle; annual subscriptions are pro-rated for unused months minus the discount you received. Your BC tenant and all your data stay with you — you just lose the Footing support layer.
